Apple Cake

Yesterday I saw I had a few crispy beautiful apples in the fridge, so I quickly decided to make one of my favorite and simple apple cake. This recipe is the very same one my great-grandmother used to make for us when we were children!

How to Make an Apple Cake

This cake is a very basic recipe but it has a lot of apples. I always add them at the end and you may feel it is a lot, believe me its not. I normally put 3 medium or 2 bigg apples.

I advise you on depending how you like your cake, you can either use oil or butter. I sometimes mix both in one recipe, or just use butter. The butter gives creamy and moist taste to the cakes. Do not melt the butter leave it on room temperature!


  • 2 cup all-purpose flour
  • 10gr. baking powder
  • pinch of salt
  • 100gr, (1/2 cup) unsalted butter, at room temperature
  • 1 cup granulated sugar ( or use 1/2 brown and 1/2 white)
  • 2 large eggs
  • 120 ml (1/2 cup) Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon of cinnamon
  • 2-3 apples, peeled and cut into small cubes (I like Honeycrisp, Pink Lady or Granny Smith)
  • Confectioners sugar for decorating cake


  • 50 grams (1/4 cup) caster sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, melted


Preheat the oven to 180Β°C. Butter and line a rectangular baking tin (approx 27cm x 20cm) with parchment paper, or use regular cake pan.

In a bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.

In a separate large mixing bowl, add flour, baking powder, baking soda and sugar.

Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined.Add chopped apple and stir briefly to combine. Spoon batter into prepared tin.

To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over cake batter.

Bake cake for approximately 45-50 minutes or until a toothpick inserted into the middle comes out clean. Allow to cool for about 20 minutes in the pan and then transfer to a wire rack.

Once is cool you can sprinkle some confectioner sugar over it and enjoy it.
